Fat Burning Chocolate Chip Cookies

Prep and Cook time: 25 min
Serves: 12
Ingredients:
4 large pitted dates
2 c walnuts
2 tsp vanilla
1 tsp baking soda
Pinch sea salt
2 TBSP extra virgin coconut oil
1 organic egg
1 tsp cinnamon
Stevia to taste
¼ c shredded coconut
½ c dark chocolate chips
1 TBSP coconut oil (for cookie sheet)

Directions
Preheat oven to 350F
Blend dates, nuts, & vanilla in food processor until a paste forms. Add baking soda, salt, coconut oil, egg, cinnamon & stevia. Mix thouroughly.
Scrape batter into bowl & stir in coconut & chocolate. Form 12 portions of dough onto oiled cookie sheet, then gently flatten with fingers.
Bake until nicely browned, about 12 minutes.
