Gluten Free Paleo Peanut Butter Chocolate Chip Cookies
This is by far the BEST cookie recipe yet! The cookies are chewy and soft and oh so delicious! They take only minutes to make which is a bonus too!

• 1 cup peanut butter (or nut butter of your choice)
• 1/2 cup organic coconut sugar
• 3 tablespoons coconut oil
• 2 eggs
• 1/4 cup coconut flour
• 1/2 teaspoon baking soda
• 1/4 teaspoon himalayan salt
• 1/3 cup dark chocolate chips
Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
In a food processor, add in peanut butter, coconut sugar and coconut oil; process until it comes together, about 1 minute. Add in eggs and process again.
Next, add in coconut flour, baking soda and salt; process again until a dough forms.
Stir in chocolate chips.
Drop dough onto prepared cookie sheet – it will look gooey like this:
Bake for 10 minutes or until cookies turn slightly golden brown around the edges.
Allow them to cool on cookie sheet for at least 5 minutes
Store the cookies in the fridge, this will help them to set and become firmer. This recipe makes cookies that are VERY soft, which I love! If you prefer a firmer cookie, you can bake them a little longer, and also increase the amount of coconut flour to 1/3 cup.
